The Biography
Born in 1990 in Salerno, Francesco Capece began his career as a pizzaiolo when his father and brother decided to open a pizzeria in their hometown. Although the first family venture did not achieve the desired success, this experience allowed Capece to learn the fundamentals of pizza-making and develop a passion for dough and the pursuit of quality ingredients.
After gaining experience in various pizzerias across Salerno, the United States, and around Campania, Francesco launched his own project in 2016 in Pezzano Filetta, a small village in the province of Salerno: La Locanda dei Feudi. The venture quickly garnered critical and public acclaim. However, the turning point came when Capece decided to move to Milan with his longtime friend and partner, Mario Ventura. Together, they founded "Confine – Pizza e Cantina" in 2023, a project that blends the art of pizza with an excellent wine cellar, combining tradition and modernity in a unique space in the heart of the city.
Capece's pizza stands out for its use of carefully selected ingredients, including organic flours and sourdough starter, as well as high-quality toppings sourced from both Campania and other regions of Italy. His creations not only elevate the classic taste of pizza but also explore new flavor combinations, making each dish a refined and surprising experience.
Thanks to his skill and creativity, Capece has received significant recognition. In 2023, he was named "Best Pizza Chef Under 35" at the Food&Wine Italia Awards, confirming his status as one of the best emerging pizzaioli on the national level. Confine was ranked 11th in the "50 Top Pizza Italia 2023" list and earned the title of "New Entry of the Year" for its contemporary vision of pizza and innovative approach that has captivated the Milanese public.
