Trained in renowned German restaurants, Thomas Imbusch now owns one: the “100/200 Kitchen” in Hamburg, awarded Two MICHELIN Stars and a Green one.
Thomas Imbusch, hailing from a modest village in Lower Saxony, honed his skills in high-end German gastronomy by cooking at famed restaurants across Germany. These include the “Park Restaurant” in Bremen, the Three MICHELIN-Starred “Victor's Fine Dining” by Christian Bau in Perl-Nennig, and later at the “Off-Club” in Hamburg, the final step before a decisive turn in his career.
In 2018, Imbusch opened “100/200 Kitchen” in a former warehouse space, swiftly earning accolades. It gained a MICHELIN Star in its second year, followed by a second Star and a Green Star. Imbusch’s culinary approach is unique: he creates dishes inspired by a specific theme or a particular animal, utilizing it from head to toe and cooking it on the Molteni stove, which operates at between 100° and 200°C (hence the name). Whether it's fish, seafood, beef, a completely vegetarian menu during summer, or game in autumn, Imbusch always opts for the highest quality ingredients, sourced from the finest producers and farmers. In 2021, Imbusch earned the title of rising star of the year in the “Our Favorites” category from the Frankfurter Allgemeine Sonntagszeitung. Along with his wife Sophie Lehmann, who also serves as the restaurant’s director, he established a culinary academy dedicated to training aspiring restaurateurs, young and ambitious individuals.
