The Biography
Born in 1988 in Spinetoli, Marche, Sacha Di Silvestre began his culinary journey working as a pizzaiolo in his hometown. His passion for hospitality quickly evolved from the kitchen to the dining room, and he relocated to London and then Zurich, where he worked at Globus. However, one of the most transformative experiences in his career came during his time at Casa Maria Luigia in Modena, part of Massimo Bottura's Francescana Family. There, Sacha refined his skills in wine and service, learning from one of the best in the industry.
In 2022, Sacha made a significant move to Bangkok, where he joined Potong, a restaurant helmed by the talented Chef Pam (Pichaya Soontornyanakij). Potong has quickly become a staple in Asia's gastronomic scene, earning numerous accolades, including recognition in the prestigious 50 Best Restaurants lists both in Asia and globally. Sacha was immediately recognized for his expertise and took on the role of maître and sommelier, playing a crucial role in crafting a dining experience that seamlessly blends bold Asian flavors with exceptional service.
