Fabiana Gargioli is the sommelier at "Armando al Pantheon," a family-owned restaurant since 1961. After completing her AIS course and a master class focused on Chianti Classico, Fabiana continues her education in the pursuit of her passion, aiming to create the perfect wine list for her family's restaurant.
Born in the early '80s in Rome to the Gargioli family—enthusiasts of fine food and owners of "Armando al Pantheon" since 1961—Fabiana Gargioli didn't immediately follow in her family's culinary footsteps.
She attended a classical high school and graduated in 1996. In 2003, she began working in the dining room of her family's restaurant, where she increasingly found herself enamored with wine. She started her sommelier training with AIS (Italian Sommelier Association) in 2005 and earned her diploma the following year.
Continuing to coordinate the dining service and manage the wine list at "Armando al Pantheon," she attended a master class between 2014 and 2015 focused on Chianti Classico, conducted by Armando Castagno. But that wasn't enough for her. Determined to continually improve, Fabiana autonomously furthers her professional development by studying indigenous Italian grape varieties and visiting wineries. This is important because a direct relationship with producers is her primary criteria for selecting wines to feature on the restaurant's list.
Additionally, Fabiana is a founding member of the non-profit organization "FFK." This association generates necessary funds to support projects related to the "Bambino Gesù" hospital and other institutions by producing a wine.
