After 16 years on the Naviglio Pavese, the MICHELIN Starred chef of Ristorante Sadler leaves his historic location to begin a new chapter inside the Hotel Casa Baglioni Milan.

Chef Claudio Sadler will open the doors of his new home, in the center of Brera, the city's most bohemian district, in a wonderful 1913 Art Nouveau building that houses Casa Baglioni. After sixteen years on Via Ascanio Sforza, the choice fell in the center, in an elegant part of the city, "the right place to end my career," explained the chef, inside a very exclusive hotel. The collaboration between the chef and Collection Baglioni is well underway: "After Gusto by Sadler at Baglioni Resort Sardegna and the opening of Canova Restaurant by Sadler at Baglioni Hotel Luna in Venice," says the chef, "I am excited about this new partnership in my city, Milan." (while the Il Circolino project takes off in Monza)
Chic 'n Quick, the Chef's Modern Trattoria, will remain in Via Ascanio Sforza, an environment in full Sadler style with quick and quality service, where to have lunch or dinner in a genuine atmosphere, but adapted to Milanese modernity. As for the now "old" location of Ristorante Sadler, it will continue to be the location dedicated to cooking classes remaining available to anyone who wants to rent it for events and convivial moments, for companies for team building activities or shootings, also with the availability of Chef Sadler and his staff for catering service.
The "New" Restaurant
Coming to the new venue, available to both hotel customers and outside guests will be breakfast, sweet and savory, a light lunch with an average cost between 40 and 45 euros, and an evening gourmet menu, scheduled from Monday to Saturday. The wine cellar is stocked with a prestigious selection of Italian and international labels that will satisfy even the most demanding palates. Thirty-six seats are available, and the new Korean Executive Chef Park Kisung together with Chef Sadler are ready to offer a well-defined culinary experience.

"The philosophy will always be the one that distinguishes me," Sadler warns, "a balance between tradition and innovation, trying to creatively reinterpret regional Italian cuisine, with a focus on the seasonality of the raw materials used. Change is definitely a challenge that I continue to welcome; I hope my guests will appreciate our new home."
Right in the center of Milan, inside a hotel, the clientele the chef expects is mostly international: "It will be an opportunity to tell foreigners about our country, through my dishes that I see as reassuring, because I want them to appreciate traditional Italian cuisine with an innovative style through our dishes. I want the customer to fully enjoy all the best of made in Italy." The layout of the hotel is also innovative: no reception, but a cozy lounge, combining luxury and family hospitality. Digitization of check-in/check-out and booking processes will be done through a dedicated app.

"This place," Sadler explains, "will be for me and for all its guests a distinguished and elegant Milanese living room, an immersive journey into the art and design of 1960s Milan, where one can admire live works of art by great Italian and international artists such as Castellani, Paolini, and Gastel. A corner of Milan where you can pamper the palate as well as the spirit."
