For Pasquale D’Ambrosio, the resort’s chef, it’s a choice rooted in the place where he works and the kind of experience he wants to offer guests. “For us, breakfast isn’t simply the first meal of the day. It’s the first culinary story we share with our guests,” he explains.

It’s also one of the moments when the connection to local cuisine can be most immediate: in the morning, simple ingredients, eating habits, and preparation methods that are part of the local culture come into play. The 7Pines philosophy thus translates into a breakfast that prioritizes quality, especially in the raw ingredients themselves. “We don’t want to impress through excess, but through the quality, recognizability, and history of what we bring to the table,” says D’Ambrosio. A Network of Small Producers

To build this identity, the kitchen has focused on sourcing ingredients and, above all, on building relationships with the people who produce them. This is an aspect the chef considers crucial: getting to know, whenever possible, the producer, the place where they work, and the methods they use to create the ingredients that arrive in the kitchen. “Behind a ricotta, honey, cheese, or loaf of bread, there isn’t simply a raw ingredient: there’s a person, a family, a region,” D’Ambrosio emphasizes.

It’s a perspective that also changes the way we think about a hotel breakfast. The ingredients aren’t chosen simply because they’re representative of Sardinia, but for their ability to express a tangible part of the island. Cheeses, honey, breads, preserves, cured meats, and desserts thus become everyday staples through which the work of different communities finds its way into the kitchen. Among the elements that best embody this approach is bread. This is precisely where the chef begins to introduce Sardinia to a guest who has never tasted it before. “Bread, in Campania as in Sardinia, is culture. The shapes, flours, techniques, and traditions may change, but its significance remains deeply tied to our identity.”

From Campania-style bread to carasau

D’Ambrosio’s connection to Sardinia also stems from his personal history. A native of Campania, he brought with him culinary memories of bread, pastries, fruit, tomatoes, and coffee. His work on the island has added new ingredients and new habits to this heritage, without erasing what he had learned in his homeland. “What I try to do is not choose between the two, but create a dialogue between them. My memories are the starting point; Sardinia is the place that has taught me new ingredients, new habits, and another way of interpreting simplicity,” he explains.

Bread once again becomes the most obvious common ground. In Sardinia, D’Ambrosio explored the value of grains and the island’s diverse traditions, from carasau bread to other regional breads. Alongside these, products such as honey, ricotta, and cheeses allow him to work with the ingredients without resorting to particularly elaborate preparations. If he were to put together an ideal breakfast for a guest interested in getting to know the island, the chef would choose precisely these items: a large loaf of Sardinian bread, cheese, honey, ricotta paired with a seasonal accompaniment, and finally a traditional dessert. A Breakfast That Changes With the Seasons

Even something as seemingly constant as breakfast follows the agricultural calendar. During the resort’s operating months, the available fruits, vegetables, herbs, jams, and other ingredients change. “It wouldn’t make sense to serve exactly the same breakfast in May, July, and October,” notes D’Ambrosio. For the chef, seasonality isn’t simply about swapping out a few ingredients, but about the opportunity to work with what the local area has to offer at different times of the year. This principle is also reflected in the search for suppliers. Sardinia boasts a wide variety of local produce and a level of biodiversity that allows the kitchen to continually discover lesser-known gems. For this reason, the work is never considered complete: alongside well-established products, there remains a commitment to identifying small producers and specialties that have not yet gained widespread recognition outside the island.

Sardinia for an International Audience

7Pines welcomes an international clientele, so breakfast must accommodate different dietary habits. Some products familiar to guests remain on the menu, because hospitality also involves offering something familiar. Alongside these, however, the kitchen highlights local specialties. “An international guest should naturally find some familiar elements that are part of their routine. That’s also what hospitality means: making a person feel at ease,” explains the chef.

A good cheese, a unique honey, or traditional bread can be immediately recognizable precisely because of their quality and identity.
