Biography

In a small Argentine village, where vineyards stretch like veins across the land, Juan Pablo Nieva discovered his calling. His childhood, soaked in tales of harvests and tastings, planted the seeds of what would become the focus of his life: wine.

The decision to move to Spain to study under the guidance of Martín Berasategui was not just a step towards professional training but a leap into the heart of global wine culture. Returning home marked the beginning of his rise to elite sommellerie, culminating with the recognition of his mastery at the Relais & Chateaux Hotel Cavas Wine Lodge. Here, among the Andes, he wove wine stories that speak of distant lands and deep passions, earning the admiration of colleagues and guests.

His adventure then took him across the ocean to Conversano, where his talent found a new home at the Pashà restaurant. Nestled in the history of an ancient palace, Juan Pablo transformed the cellar into a treasure trove of flavors and memories, offering his guests not just wine but liquid stories that capture the essence of the lands they come from.

His skill in storytelling through glasses has made Pashà a coveted place for wine lovers. Summer evenings in the restaurant's garden, with a view of Conversano's medieval castle, become magical moments under Nieva's expert guidance, selecting Champagnes and wines that narrate stories of excellence and tradition.
