Silvio Nickol is at the helm of the two Michelin-starred restaurant that bears his name, located in Vienna's Palais Coburg, a 5-star superior hotel.
From a young age, Silvio Nickol showed a deep interest in cooking, inspired by his family's traditions. After graduating from hotel school, he began to gain experience in Germany, where he honed his skills.
A milestone in his career was working with chef Heinz Winkler at the Residenz Heinz Winkler in Aschau, where he deepened his technique and attention to detail. He then worked at Die Schwarzwaldstube in Baiersbronn under Harald Wohlfahrt, where he performed his abilities.
In 2009, he took over the helm of the Schlossstern restaurant at the Schlosshotel Velden in Austria, which was awarded two Michelin stars. In 2011, at the invitation of Peter Pühringer, he began managing the fine dining at Palais Coburg in Vienna, which was later renamed Silvio Nickol Gourmet Restaurant. Under his leadership, the latter got two Michelin stars in 2012 and has maintained them in subsequent years, as well as receiving numerous other recognitions, including 18 out of 20 points in the Gault&Millau guide.
