Biography
Cesare Battisti was born in Milan in 1971 and developed a passion for cooking from a young age. After working in various restaurants in Europe, he returned to Milan to focus on traditional Milanese gastronomy. In 2009 he opened Ratanà, located in the Porta Nuova district, an area undergoing rapid transformation due to new urban developments.
The Ratanà restaurant is distinguished by its use of excellent raw materials from small local producers and its focus on issues of economic, environmental, and social sustainability. Battisti is known for his ability to reinterpret traditional Lombard dishes from a modern perspective, using innovative techniques and careful research of raw materials. His signatures include “Risotto alla Milanese,” reinterpreted in a modern key with the “Alla Vecchia Milano” version, cassoeula, mondeghili and various freshwater fish dishes, reflecting his dedication to the cuisine of memory.
