In the contemporary culinary landscape, few chefs have managed to weave together the refined traditions of French cuisine with the bold innovation of Chinese gastronomy like Adeline Grattard. Born in Dijon, in the heart of Burgundy, Grattard has transformed her childhood dream into a starred career, becoming one of the brightest figures in the Parisian gastronomic scene with her restaurant Yam'Tcha.
Biography
Adeline Grattard approached cooking almost by fate. Originally from Dijon, a region known for its excellent wines and rich culinary tradition, Adeline grew up in a family where food was a true language of love. Her passion for exotic flavors and curiosity towards different cultures, however, pushed her beyond the borders of France. After training at the prestigious École Supérieure de Cuisine Française Ferrandi, her experience alongside chefs of the caliber of Pascal Barbot at L'Astrance marks the first chapter of her culinary adventure.
The next chapter sees her as the protagonist in Hong Kong, a city where Grattard deepened her knowledge of Chinese cuisine, working as the head chef at the restaurant BO Innovation. This experience became fundamental in defining her unique style: a fusion between French excellence products and Chinese culinary techniques, which she describes as "a continuous dialogue between two cultures".
Back in Paris, together with her husband Chi Wah Chan, she opened Yam'Tcha in 2009. The restaurant, whose Cantonese name evokes the act of drinking tea accompanied by food, quickly became a benchmark for Franco-Chinese gastronomy, earning a Michelin star the following year. Adeline and Chi Wah didn't stop there: they expanded their activities with a tea and bao boutique, and a bistro, creating a culinary ecosystem that revolves around their vision.
