Born in the small town of Cortiguera, Cantabria, Alberto Carballo began his foray into the world of cooking with mentors such as Alberto Chicote and Quique Dacosta. After honing his skills in Spain, the chef ventured to New York in 2010. Starting at La Fonda del Sol, he climbed the heights of the city's dining scene, joining Dani García's team at Manzanilla and later at Casa Dani. Today, Carballo leads Casa Cruz, one
