Norbert Niederkofler's recipe: Waffle

Ingredients for 4 people

  • 85 g egg yolk
  • 123 ml cream
  • 123 g wheat flour “00”
  • 6 g salt
  • 35 g butter
  • 35 g marrow
  • 123 g egg white
  • 5 g of sugar
     

Other ingredients

  • 100 g vendace eggs
  • 200 of creme fraiche
     

Procedure

Combine the cream and egg yolks, mix the mixture with the flour, salt and sugar, add the melted fats and finally gradually incorporate the semi-whipped egg whites.
Heat the waffle iron over high heat, grease it lightly to prevent the batter from sticking, pour the mixture inside and cook 3-4 minutes per side until golden brown.
Serve the waffle with the creme fraiche and vendace eggs.
