The elegance of shrimp and the intensity of 'nduja blend together in a liquid 'nduja with shellfish: Maicol Izzo's first iconic dish.
Ingredients for 4
- 350 g Spaghetti di Gragnano
- 1 lemon
- 100 g n'duja
- 4 red prawns
- Salt
- Extra-virgin olive oil
- 50 g orange
For the shrimp n'duja
Sift the n'duja through a fine sieve, then blend with the 4 shelled and cleaned shrimp, adding the orange juice.
For the pasta
Prepare an infusion of water and lemon peel and leave to rest overnight. Cook the pasta in this infusion, then toss with the same infusion, garlic, and oil. Meanwhile, heat the shrimp n'duja until melted. Once the pasta is cooked, arrange it on a plate and “dress” with the shrimp n'duja.
