Norbert Niederkofler's recipe: Frico
Ingredients for 4 people
For the Frico
- 85 g white onion, chopped
- 600 g mountain potatoes
- 150 g aged Montasio cheese
- 30 g butter
- Salt to taste
- Pepper to taste
For the blood cream
- 200 g pig's blood
- N 2 egg yolks
- 100 g leek
- 50 g butter
Procedure
For the frico
Peel the potatoes and slice them thinly with a mandoline. Fry the onion in butter, add the potatoes and cover with a lid, stirring occasionally.
Allow to cook until the potatoes are soft. Add the Montasio cheese and season to taste.
Now mash the dough well and let it form a nice firm crust on both sides.
For the cream of blood
Wilt the leek in a saucepan, once cooked blend all the ingredients in the Thermomix, bring to 68°C, adjust the flavor and cool.
Dish composition
Cut the frico into triangles and spread the cream of blood on top, finish with alpine thyme leaves.
