Today, there’s a lot of talk about haute cuisine, Michelin stars, and artistic plating, but behind the scenes in the world of food & beverage lies a complex system marked by skyrocketing energy costs, tight profit margins, and the constant search for dedicated staff. It is precisely this real, unfiltered reality that prompts the wake-up call from Acky Khan, one of the UK’s largest fast-food and coffee shop franchisees, who today leads a giant with 1,500 employees, coordinated through his holding company, Gastronomy Foods.

With the usual candor of someone who has experienced every single aspect of the kitchen, Khan makes a heartfelt appeal to the British government ahead of the upcoming fall budget, as also reported by the BBC: “Don’t forget those who work hard every day in the provinces and create real jobs for young people,”. Between the minimum wage increase, sky-high energy bills, and the exorbitant costs of opening new locations, the restaurant industry is facing a significant storm. Yet hospitality remains one of the most extraordinary drivers of youth employment.

From Today’s Challenges to the Plan to Double the Business

Despite the economic turbulence, Khan’s vision looks to the future. His company, Gastronomy Foods, recently opened a new location in Shrewsbury (at the Meole Brace shopping center), bringing the total to 50 KFC restaurants and 30 Starbucks coffee shops. And the plans for the future are certainly not modest: the stated goal is to double the size of the business within the next five years. An ambitious challenge for a man who has held literally every role in the industry.

Put on Your Apron: Working Your Way Up from Washing Dishes

Acky Khan’s story didn’t begin in the halls of a business school, but in front of a deep fryer, scrub brush in hand, in East London. It was during his high school years when young Acky landed his first job at KFC. “It was hard work. But once I got the hang of it, it became a wonderful experience. Nothing helps you understand a company better than hands-on experience: I know firsthand what it means to spend nights scrubbing trays or cleaning griddles,” the entrepreneur recalls in an interview with the British publication. This humble and pragmatic approach is one he now passes on to his 28-year-old twin sons, who joined the company with the strict requirement to work their way up, starting right from the bottom in customer service and the kitchen. For Khan, in fact, the real stars aren’t the managers in suits and ties, but the young people behind the counter: “It’s the employees who keep this place running, not me.”

The Big Leap and the Night He Nearly Lost Everything

The real turning point in his entrepreneurial career came in 1996, the year Khan took the big leap by purchasing his first franchise location and hiring his first 15 employees. It was an adventure that didn’t start without its share of thrills: to secure his first bank loan, he had to mortgage his own home. The real trial by fire, however, came in 2008, during the storm of the global financial crisis. Debts and pressure from the bank reached such a point that they pushed Khan to take an extreme measure during a crucial meeting: “I remember that day very well in the bank’s conference room. I took my keys, threw them on the table, and said, ‘You know what? Take the house—and take the business, too.’” From that abyss, thanks to rigorous management and the tenacity of someone who knows every secret of the trade, Khan managed to bounce back, transforming a personal gamble into a modern culinary empire that continues to feed thousands of families.

The secret ingredient? Believing in young people

Acky Khan’s journey reminds us that the world of food—even more than recipes—is made up of people and opportunities. At a historically challenging time for the global restaurant industry, his story shows that a passion for hospitality—born when, as a child, a takeout meal was a rare treat to share with the family—can truly turn a deep fryer into a springboard for an extraordinary dream.
