Born in Rome in 1988, Alessandro Proietti Refrigeri is a chef with a cosmopolitan vision. After experiences at Noma and La Pergola, he earned a MICHELIN Star first at Villa Naj and later at La Coldana, where he expresses an international cuisine crafted with local, 30 km-sourced ingredients.

Born in Rome in 1988, Alessandro Proietti Refrigeri trained at a hospitality school before beginning his career in several of the city’s major hotels. His turning point came with a move to Copenhagen, where he joined the team at Noma, then considered the world’s best restaurant and holder of three MICHELIN Stars. Over two years, he absorbed the Nordic philosophy of cooking—focused on research, fermentation, and respect for raw ingredients.

During this period, he also took part as Sous Chef in Noma’s first pop-up in Tokyo, an experience that deepened his appreciation for Japanese culture, seasonality, and technical precision.

Back in Italy, he continued refining his craft at La Pergola in Rome, a three-MICHELIN-star restaurant led by Heinz Beck, where he worked for two years as Sous Chef. He then became Coordinating Chef for the Berberè Group, expanding his managerial and creative experience within a dynamic hospitality setting.

In 2018, he moved to the Oltrepò Pavese area to lead the kitchen at Villa Naj, where in less than a year he earned his first MICHELIN Star. His cuisine stood out for its balance of elegance and concreteness, bringing an international sensibility to local ingredients.

In 2023, he began a new chapter as Executive Chef of La Coldana, near Lodi, where he achieved another MICHELIN Star in just ten months—a recognition of both his consistency and evolution as a chef.

Proietti Refrigeri’s philosophy reflects an international approach rooted in local sourcing, with ingredients coming from within 30 km of the restaurant. His style blends northern European precision with Mediterranean warmth, resulting in dishes that are refined, sincere, and deeply connected to place.
