A self-taught chef rooted in Rimini’s maritime tradition, Gianpaolo Raschi leads the Michelin-starred kitchen of Guido 1946. In 2020, he opened Augusta, a restaurant dedicated to his maternal grandmother, reviving domestic and traditional seaside flavors.
The family story began in 1946, when grandfather Guido opened a small wooden shack on the beach in Miramare di Rimini, which would later grow into the restaurant Guido. Gianpaolo grew up surrounded by the sea, Romagna’s seafood cuisine, and the aromas of fresh catch, learning alongside his grandmother Augusta and his mother Tiziana.
In the early 1990s, he took charge of the kitchen at the family restaurant, despite never having attended culinary school. His training took place entirely at Guido: experimenting, making mistakes, and gradually refining a personal style defined by contrasts in flavors, textures, and memories.
In 2020, together with his brother Gianluca, he inaugurated Augusta – Cucina & Cicchetto in Rimini’s historic center, dedicated to his maternal grandmother. Augusta is a space that revives domestic recipes and Rimini’s seafood tradition, reinterpreted with the same contemporary approach that defines Guido.
Gianpaolo’s cuisine balances respect for the sea—fresh catch and local ingredients—with creativity. His dishes aim for simplicity and recognizability while maintaining aesthetic care, contrasting textures, and precise technique.
