Based in Strasbourg, pastry chef Laura Schneider left teaching to follow her true calling: pastry. With Jaune Citron, she creates seasonal and refined desserts, from reimagined cookies to elegant entremets, combining craftsmanship and research while sharing her passion through training and workshops.
Laura Schneider, 31 years old and based in Strasbourg, began her career as a primary school teacher before deciding—just over three years ago—to completely change direction and embrace her true passion: pastry.
Her vision took shape with the opening of Jaune Citron, a pâtisserie that fully reflects her identity and style. Here she creates entremets and pastries made with seasonal, locally sourced ingredients, always carefully selecting the highest quality raw materials.
Among her signature creations, Laura has given a central role to the cookie, a treat she has always loved. Starting from the classic recipe, she developed a more refined version, enriched with pâtisserie techniques and details such as homemade nut pralinés.
Jaune Citron is also a space devoted to sharing and learning: the pâtisserie trains apprentices directly and organizes workshops for both children and adults, preserving the educational spirit Laura considers essential, even in her new profession.
To meet growing demand, Schneider announced the opening of a second boutique in Strasbourg by the end of the year. The new space will feature a larger kitchen and a tea room, enabling her to welcome more guests and further expand the experience offered by Jaune Citron.
