Chef Daniel Colombo is the culinary heart of Agriturismo Funtanin, which opened September 12, 2024. Within just seven months, the restaurant earned recognition in the Michelin Guide—a testament to his 18-year culinary journey marked by sacrifice, passion, and devotion.

Daniel Colombo began his culinary path 18 years ago, pursuing a dream to enter the renowned Michelin Guide. His perseverance, passion, and countless sleepless nights culminated in a breakthrough: Il Funtanin, the agriturismo he leads, opened on September 12, 2024, with a clear goal—to offer an authentic experience rooted in local agricultural and gastronomic traditions. 

Within just a few months, Funtanin secured a spot in the Michelin Guide, an extraordinary achievement for such a young establishment. The restaurant’s success stems from an unwavering philosophy centered on genuine hospitality, creativity, and the thoughtful use of the freshest, seasonal ingredients—many cultivated in its own garden. As described, “every dish tells a story,” with typical flavors reinterpreted through a personal lens to create truly unique culinary experiences.

Colombo himself expressed the emotional impact of this recognition: receiving the Michelin entry was “a tremendously strong emotion, hard to put into words”. He said it symbolized years of effort and passion—but emphasized that it's not a destination, but rather “a huge stimulus to continue growing.” He attributes the honor to the collective effort of his young, passionate team, including Giovanni Scuto, Lorenzo Parrino, Elisabetta Giuli, and Ilaria Camoletti. He described the achievement as “the fruit of daily teamwork sharing the same vision,” fueling pride and renewed energy to persevere without losing the passion that brought them there. 

Asked about a standout dish, Colombo answered with humility: he didn’t believe a single dish was responsible—“they all represent me.” Every creation is born from a desire to evoke emotion, convey ties to his territory, and reflect memory, roots, and respect for ingredients—always with an eye on the present. 

With this prestigious recognition, Il Funtanin quickly positions itself as a local benchmark for quality cuisine—proof that authenticity, passion, and care can achieve great things in remarkably short time. The dream continues, as the chef affirms: “never stop moving emotions.”
