Born in 1995, Andrea Brunetti is the pizzaiolo behind Sileo in Nucetto (Cuneo), awarded two slices by Gambero Rosso and included in the 50 Top Pizza ranking. He has transformed personal challenges — including a severe form of Tourette syndrome — into social commitment, talent, and rebirth.

Andrea Brunetti was born in 1995 in Bagnasco, Cuneo province. After graduating as a surveyor, his passion for pizza took over: he trained in Campania and, in 2017, opened Acqua & Farina in Priola, soon standing out for his focus on high-quality ingredients and earning two slices from the Gambero Rosso guide.

During the pandemic, and while dealing with the worsening of Tourette syndrome (diagnosed in adulthood), he was forced to close the restaurant in 2022 after personal losses and difficulties.

Despite this, Andrea did not give up: with the support of family and friends, and through care that included acupuncture, he found the strength to start over. In 2023 he opened Sileo in Nucetto. The name (Latin for “to restart”) embodies the meaning of his rebirth. The restaurant quickly earned two slices from Gambero Rosso and was listed in the 50 Top Pizza ranking.

Andrea openly addresses his condition: at Sileo, diners find cards on the tables explaining what it means to live with Tourette syndrome, breaking down prejudices and raising awareness.

In 2023 and 2024, he also organized charity gastronomic events, collaborating with chefs such as Ugo Alciati, Michelangelo Mammoliti, Sergio Scovazzo, and Anthony Falcone, donating proceeds to health and social initiatives.

Sileo stands out for creativity and technical mastery: Andrea offers four types of dough — contemporary, Neapolitan, Roman tray-baked, and “Nuvola” (cloud) in slices with multi-grain flours — supported by the use of a two-chamber Series S oven (Fast bake and Multi bake), which allows him to expand his menu while maintaining precision and consistency.
