Born in Agrigento in 1990, Giorgio Sorce leads the family pizzeria Sitàri (No. 99, 50 Top Pizza Italy 2024) and co-founded Fortuna in Singapore, ranked No. 28 in 50 Top Pizza Asia-Pacific 2025 and winner of the “Best Fried Food 2025” award.
A second-generation pizzaiolo, Sorce kneaded dough in his father’s shop from his teens. In 2013 he re-launched it as “Sitàri – Sorce Family,” championing 48-hour ferments, ancient Sicilian grains and strictly regional toppings. The project earned 2 Spicchi from Gambero Rosso (2020-2021) and a spot among Italy’s top 100 pizzerias (now No. 99).
In 2024 he and his cousins exported the brand to Asia, opening Fortuna – Drink & Eat in Singapore. Their contemporary doughs and signature fried items—like the pistachio-topped montanara—secured the 28th place in 50 Top Pizza Asia-Pacific 2025 plus the “Best Fried Food” special award.
Sorce’s credo is “evolving tradition”: 75 %-hydration mother-yeast dough refreshed with local heritage grains, cold maturation and seasonal menus (ten Margherita variants, black-rice and gluten-free bases). In 2025, Sitàri also entered The Best Pizza Awards at No. 91 worldwide.
