Born in Pignataro Maggiore (Caserta) in 1978, Marco Quintili—World Pizza Champion 2016 in Parma—brought contemporary Neapolitan pizza to Rome with I Quintili (Tor Bella Monaca, 2018) and, in 2024, launched the hybrid format Fina Fina, after rising to No. 18 in 50 Top Pizza Italia 2020.
Quintili learned the craft at thirteen in his family’s pizzeria and, after finishing science high school, spent nights in local mills studying flour and fermentation. His break-through came at the Campionato Mondiale della Pizza 2016 in Parma, where he won gold in the “Pizza American Style” category, earning the World Champion title.
In March 2018 he opened I Quintili in Tor Bella Monaca—then a gourmet-desert suburb of Rome—with 75 %+ hydration, “canotto” crust and Campania-meets-Lazio toppings; Italian media labelled it a “cathedral of flavour on the outskirts.” Success led to a second site in Furio Camillo (2020), a branch on Naples’s Riviera di Chiaia (2021) and a corner at Mercato Centrale Torino (2022). 50 Top Pizza Italia 2020 placed the brand 18th nationwide and named it “Pizzeria Novità dell’Anno.”
October 2024 saw the debut of Fina Fina near Rome’s Caffarella Park: a 35-cm disc marrying a wafer-thin Roman base with light Neapolitan alveolation, made from a fibre-rich flour blend developed with Molino Magri. The venue pairs creative fritti with an all-Italian bubbles list.
