Julien Royer is the chef and co-founder of Odette, a three-Michelin-starred restaurant in Singapore. Renowned for contemporary French cuisine that emphasizes terroir and seasonal ingredients, Royer has built a gastronomic bridge between his origins and Asia.

Raised in the Cantal region in a farming family, Julien Royer developed a deep respect for raw materials and seasonality from a young age. His training at some of France's best hotel schools, combined with professional experience at prestigious restaurants, such as Michel Bras in Laguiole, led him to espouse the “farm-to-table” philosophy.

Driven by a desire to explore new horizons, Royer moved to Asia, where he became chef at JAAN in Singapore, earning his first major awards. In 2015, in partnership with The Lo & Behold Group, he opened Odette inside the National Gallery in Singapore, paying homage in name to his grandmother, his muse for his sensitivity to genuine flavors.

Since then, Odette has been offering a contemporary French dining experience strongly linked to the quality and origin of ingredients, carefully selected from around the world and revisited with subtle Asian influences. Royer's approach aims to enhance the purity of taste, celebrating the intrinsic beauty of each product and fostering a harmonious balance between technique, aesthetics, and enhancement of terroir.

The results come quickly: Odette quickly obtains two Michelin stars and, in 2019, earns its third star. In 2020, the restaurant is named Asia's best restaurant by the 50 Best Restaurants, an achievement that places Royer among the most influential international chefs. His dedication is not limited to the culinary sphere: Royer cultivates a direct relationship with producers, fosters the professional growth of his team, and promotes a gastronomic culture based on ethics and continuous research.

Building on the success of Odette, Royer expands its presence on the Asian continent with the launch of Louise in Hong Kong, in partnership with the JIA Group. The culinary proposal, inspired by French comfort food, is enriched with global influences, reflecting the chef's international experience. In a short time, Louise established himself on the Hong Kong dining scene, earning a Michelin star and cementing Royer's reputation as one of the world's most talented and multifaceted chefs.

Today, Julien Royer represents the new generation of chefs who, while remaining true to their French roots, are enriching signature cuisine with cross-cultural influences, ingredients, and sensibilities, transforming Odette into a landmark destination for enthusiasts and connoisseurs.
