Dimitri Droisneau is a French chef known for his refined cuisine that respects the local area. He is the chef of La Villa Madie in Cassis, three Michelin stars (as of 2025).
Raised in L'Aigle, Orne, Dimitri Droisneau began his culinary journey as an apprentice at Michel Canet's Grand Saint-Michel in Alençon. He later honed his skills in some of the most prestigious kitchens in Paris:

He later honed his skills in some of the most prestigious kitchens in Paris: La Tour d'Argent, Lucas Carton under Alain Senderens, Le Bristol with Éric Fréchon, and L'Ambroisie alongside Bernard Pacaud.
In 2011, Dimitri took over as chef at La Réserve de Beaulieu on the French Riviera, where he met Marielle, his future wife and collaborator. Together, in 2013, they took over La Villa Madie in Cassis, a restaurant overlooking the Mediterranean, nestled among maritime pines and with breathtaking views of the cliffs of Cap Canaille.
Under their direction, La Villa Madie quickly gained recognition: its first Michelin star in 2014, followed by its second in the same year. In March 2022, the restaurant peaked with its third Michelin star, attesting to the excellence of Dimitri's cuisine.
Dimitri's culinary philosophy is based on the enhancement of local and seasonal products, with a focus on Mediterranean flavors. His dishes, often described as “ecosystems,” combine fresh ingredients in harmonious compositions that reflect the surrounding maritime landscape. An emblematic example is his Carabinero shrimp dish with beet and kumquat, which expertly balances savoriness and acidity.
In addition to his work in the kitchen, Dimitri is co-president of the Cassis Rugby Club, demonstrating his commitment to the local community. In September 2022, he was elected “Chef of the Year” by his peers within Le Chef magazine, an accolade that underscores the profession's respect and admiration for him.
