Mark Birchall

Mark Birchall is a British chef known for his innovative cuisine that celebrates local Lancashire produce. He is the chef patron of Moor Hall Restaurant with Rooms, a three-Michelin star, recognition that has consolidated his position in the international culinary elite.

Born in Chorley, Lancashire, Mark Birchall developed a passion for cooking from an early age. His culinary training began at Runshaw College, followed by formative experiences at the Michelin-starred restaurant The Walnut Tree in Abergavenny under chef Shaun Hill. He then worked for five years at Northcote under Nigel Howarth. In 2006, Birchall joined Simon Rogan's team at L'Enclume as sous-chef, becoming head chef in 2008. In 2011, he won the prestigious Roux Scholarship, which gave him experience at El Celler de Can Roca, a three-Michelin-starred restaurant in Girona, Spain.

In 2015, Birchall embarked on his most ambitious project yet, the opening of Moor Hall Restaurant with Rooms in Aughton, Lancashire. Located in a historic 16th-century mansion, the restaurant is surrounded by five acres of gardens, which provide a significant portion of the ingredients used in the dishes. Birchall's cuisine is characterized by a deep respect for seasonality and sustainability, with menus that emphasize the quality and freshness of local produce.

Under Birchall's leadership, Moor Hall quickly earned prestigious accolades. The restaurant was awarded its first Michelin star in 2017, its second in 2018, and its third in 2025. It also received a Michelin Green Star for its commitment to sustainability. In 2024, it was voted “Best Restaurant in England” at the Estrella Damm National Restaurant Awards.

In addition to the main restaurant, the property houses The Barn, a more casual restaurant that was awarded a Michelin star in 2022. Moor Hall also offers fourteen luxury guest rooms, allowing guests to extend their dining experience with an on-site stay.
