Alberto Morello is a renowned pizza chef and owner of Gigi Pipa, a restaurant in Este, in the province of Padua. Known for his innovative "pizzeria with a vegetable garden", he has received prestigious awards, including Tre Spicchi in the Gambero Rosso's Pizzerie d'Italia guide.
Born in Este in 1989, Alberto Morello grew up following in the footsteps of his parents, Maurizio and Miriam, who for over 30 years have run the Hotel Beatrice d'Este, a three-star hotel in a building dating from the 1960s. This environment has deeply influenced his passion.
The turning point in his career came in 2009, when the pizzaiolo working at the family restaurant, Gigi Pipa, was absent. Alberto took the opportunity to immerse himself in the world of pizza, dedicating to the art of dough preparation, rising and toppings. His proximity to Molino Quaglia's University of Pizza in Vighizzolo allowed him to deepen his knowledge and hone his skills.
In 2017, the pizzeria reached an important milestone by being awarded Three Slices in Gambero Rosso's Pizzerias of Italy Guide, a recognition that attests to the excellence of its gastronomic offerings. The philosophy of the eatery is based on the use of long lasting and highly digestible ingredients combined with seasonal products directly from the garden. This approach guarantees high quality products characterized by freshness and authenticity.
The buisiness is located in a fascinating setting, enriched by the charm of the industrial archaeology of the former Saffa complex where it stands. The interior has also been completely renovated, inspired by the surrounding nature.
