Attilio Galli is a talented Italian chef known for his innovative cuisine that skillfully blends Alpine flavors with Eastern influences. He is currently in charge of the Al Peršéf restaurant in Livigno, located in the Hotel Sporting. Under his direction, the latter has been included in the prestigious Michelin Guide 2025 and in Le Guide de L'Espresso's Selection 2025.
Originally from Livigno, Attilio Galli developed a deep connection with his local area from a young age, learning from his grandparents the art of recognizing and using mountain herbs, as well as an appreciation for local products such as butter and milk. After attending hotel school, he began his career working in Sardinia to learn more about seafood, then moved to Milan and later returned to Livigno where he ran his own restaurant focusing on leavening and food cost management.
At Al Peršéf, Attilio offers a cuisine that combines Alpine traditions with Eastern techniques and flavors. The restaurant, which has an intimate atmosphere with only seven tables and just over 20 covers, offers a unique experience where impeccable method is combined with a deep knowledge of local and international raw materials.
Galli's cuisine stands out for its ability to harmonize elements such as lake fish or game with overseas ingredients. His philosophy is based on contamination and total openness, creating dishes that express uniqueness through the encounter of different flavors.
