Hideaki Sato is an internationally renowned Japanese chef known for his cuisine that blends French techniques with Asian ingredients. He is the founder of the three-Michelin-starred Ta Vie restaurant in Hong Kong.
Born in 1976 in Nagano Prefecture, Japan, Hideaki Sato began his career specializing in French cuisine. After more than a decade, he felt the call of his roots: this turn of events led him to work for three years under the renowned Seiji Yamamoto at the three-Michelin-star Nihonryori Ryugin in Tokyo.
In June 2012, he was selected to lead Tenku Ryugin in Hong Kong, the first outside Tokyo. Under his leadership, the latter earned two Michelin stars in just six months and was named one of Asia's 50 Best Restaurants in 2014.
In 2015, he opened his own business, Ta Vie, which means "your life" in French and "journey" in Japanese. The name reflects his philosophy: to take diners on a journey that celebrates purity, simplicity, and seasonality through unique dishes that highlight oriental flavors.
The restaurant quickly gained recognition, earning its first Michelin star in 2016 and maintaining two stars for six consecutive years starting in 2017. It culminated with the award of its third Michelin star in 2023, solidifying Sato's reputation as one of the most influential chefs on the international scene. He was also named Global Chef Ambassador for RSRV, becoming the first and only person in the world to receive this honor from the champagne house Mumm.
