Gilad Peled is an internationally renowned chef known for his mastery of modern French cuisine. He is currently Executive Chef of the Colonnade Restaurant at the Mandarin Oriental Palace in Lucerne, Switzerland, which was awarded two Michelin stars in 2024.
Born and raised in Israel, Gilad Peled developed a passion for cooking at an early age, thanks to his mother, who gave him a pasta machine for his 16th birthday. After completing his military service and serving as an officer for three years, in 2006 he decided to follow his true passion and invested his savings to attend the prestigious Le Cordon Bleu in London, where he earned his Grand Diplôme.
During his training, he completed internships at renowned establishments such as Michel Roux's Le Gavroche, The Square, Marcus Wareing's Petrus and Restaurant Gordon Ramsay. After completing his studies, he worked under Clare Smyth, who became his mentor. Due to visa restrictions, he returned home in 2008, where he served as head chef at Pushkin. He later expanded his international experience at Belle Vue in Prague and as an executive at Relais & Châteaux Les Sources des Alpes in Switzerland.
In 2014, Ramsay called him back to coordinate Le Pressoir d'Argent in Bordeaux. The latter received its first Michelin star just four months after opening, and its second star in 2017.
In 2023, Gilad took over the Colonnade, a restaurant in the Mandarin Oriental Palace in Lucerne, which was awarded two Michelin stars in 2024.
Peled's philosophy is based on combining classic French-style techniques with modern influences, using local, seasonal ingredients. His attention to detail and dedication to quality are reflected in each dish, creating a harmony of flavors and artistic presentation.
