Christian Spalvieri is a Roman chef, born in 1989, known for his innovative cuisine that blends Italian tradition with international influences. He is currently the executive chef at the San Baylon restaurant at Palazzo Ripetta in Rome.

Born in Rome on August 12, 1989, Christian Spalvieri entered the world of catering by working in the dining room. After graduating from IPSSAR Marco Gavio Apicio in Anzio, he decided to broaden his professional horizons by moving to the United Kingdom. He began his career as a runner in an Italian eatery and was later transferred to the kitchen, a move that marked the beginning of his rise.
While abroad, Christian worked at the Royal Opera House in Covent Garden, where he understood the importance of being part of a large brigade. He later joined Gordon Ramsay's team, an experience he describes as his "first real school," where he learned core values such as discipline and precision.
Back home, he took a position as sous chef at L'Alchimia Ristorante in Milan, where he collaborates with celebrities such as Davide Puleio and Giuseppe Postorino; shortly after, he was appointed chef de cuisine at La Maison du Gourmet in Parma. He then opened Vitti IL Ristorante by Christian Spalvieri in Rome, together with Yukari Vitti, offering dishes that combine Italian and Japanese ingredients.
Since 2024 he manages San Baylon in Rome, inside Palazzo Ripetta. His motto "Taste is the soul of the dish" is reflected in the menu that combines technique, innovation and tradition, offering a refined journey in the heart of the capital.
