Brett Graham is one of the most influential chefs on the global culinary scene. The Australian-born chef has made his restaurant, The Ledbury in London, an icon of contemporary British cuisine. With a philosophy based on the use of quality ingredients and sustainability, he was awarded three Michelin stars in 2024.

Born in 1979 in Newcastle, New South Wales, Brett Graham started in a local seafood restaurant at the age of 15. Later, his determination and talent led him to Sydney, where he joined the prestigious Banc, headed by Liam Tomlin.

While overseas, he received the Josephine Pignolet Young Chef of the Year Award, one of the most important for young talent in Australian cuisine. This award allowed him to move to the United Kingdom to broaden his culinary experience.

Upon arriving, he began working under Phil Howard at The Square, a two Michelin star in Mayfair. There he honed his technique and developed an increasingly sophisticated approach based on the enhancement of raw materials and the pursuit of excellence. In 2005, at the age of 25, he decided to strike out on his own and opened The Ledbury in Notting Hill. The latter quickly caught the attention of critics and fans alike, earning its first Michelin star in 2006 and its second in 2010.

In the years that followed, The Ledbury became a landmark of the London dining scene, ranking in the World's 50 Best Restaurants, peaking at number 10 in 2014. In 2020, due to the Covid-19 pandemic, Graham made the difficult decision to close temporarily. This hiatus allowed him to reflect on the future direction and focus on restructuring the concept.

After a two-year wait, he reopens in February 2022 with a new philosophy: a tasting menu that celebrates extreme seasonality and connections to local purveyors. Not surprisingly, he owns a deer park in Oxfordshire that provides the meat for his dishes, and he works with small producers to ensure the highest quality. In 2024, the eatery received its highest accolade with its third Michelin star, joining the world's elite.

Graham is also co-owner of The Harwood Arms, a pub in Fulham that became the first in London to receive a Michelin star in 2010.
