Nieves Barragán Mohacho is the executive chef at Sabor, a one-Michelin-starred restaurant in London known for its authentic Spanish cuisine, from Andalusian tapas to Castilian asadors and Galician seafood dishes.

Nieves Barragán Mohacho was born in Santurtzi, a small town near Bilbao, where cooking has always been the center of daily life. Raised in a family with strong ties to Basque culture, she began to develop her passion as a child, watching and helping her mother at the stove from the age of seven.

In 1998 she decided to move to London, a bold step that would mark the beginning of her rise. After his first experiences, she landed at Barrafina, a famous chain dedicated to Spanish cuisine, where she took on the role of executive chef. During these years, she helps consolidate the rise of the brand, which also receives a Michelin star.

In 2018, she took the plunge and decided to open her own restaurant with her partner José Etura. Thus was born Sabor, located on Heddon Street. The restaurant aims to offer an authentic gastronomic experience, taking guests on a journey through the country's different regional traditions.

Sabor is divided into three distinct spaces, each with its own identity and offerings: The Counter and The Bar, on the ground floor, is dedicated to Andalusian tapas; El Asador, on the second floor, offers typical Castilian dishes, with a traditional wood-burning oven that enhances iconic preparations such as roast suckling pig; and La Mesa, a communal table designed for groups, an intimate space that celebrates community spirit. Thanks to its attention to detail, quality of ingredients, and balance, the latter was awarded a Michelin star shortly after opening, a testament to Nieves' talent and vision.

When not in the kitchen, Nieves loves to travel and draw inspiration from the world. Despite her success, she remains deeply connected to her past and her roots. For her, cooking is not just about nourishment, but a way to tell stories, evoke memories and make connections.
