Michelina Fischetti is the chef of the Oasis - Sapori Antichi restaurant in Vallesaccarda (one Michelin star and one green star), in the province of Avellino. Together with her niece Serena Falco, she continues the family's gastronomic traditions, offering a cuisine that enhances the authentic flavors of Irpinia.

It all began in 1988 when Giuseppina Pagliarulo opened the Oasis - Sapori Antichi in Vallesaccarda. From the beginning, the aim was to create a place where traditional Irpinian cuisine could be celebrated and preserved.

Today, Michelina Fischetti, together with her granddaughter Serena Falco, continues the family legacy and respects the area customs. Iconic dishes include ricotta, walnut and burnt garlic ravioli, a recipe patented by the founder and still on the menu today.

The eatery's philosophy is based on the use of local and seasonal ingredients, often organic, carefully selected to ensure authenticity and quality. This approach has earned the restaurant prestigious awards, including a Michelin star for more than 25 years and a Green Star for sustainability in 2023.

In addition to the cuisine, Michelina and her team place great emphasis on hospitality, creating a harmonious and warm environment. The wine list is rich and well-curated, and accompanies the experience with character all the way to the desserts, including the not-to-be-missed millefeuille with homemade cream, hazelnuts and wild black cherries.
