cover bio Vito Mollica

Vito Mollica is a chef originally from Avigliano, in the province of Potenza, but raised in Lombardy. His career has been marked by experience in prestigious international kitchens and a deep commitment to the enhancement of local products and Italian cuisine.

Born in 1971 in Avigliano, Vito Mollica moved with his family to Origgio, in the province of Varese, when he was six years old. From an early age he showed a strong interest in cuisine, inspired by the Lucanian specialties prepared by his mother. This passion led him to attend the hotel school of the Lecco valleys, where he began his professional training.

His career took off in 1996 when he joined the Four Seasons Group, starting in Milan. Then, in 2000, he moved to help open the Prague property, where he was able to create a restaurant with its own identity and win significant accolades, including the first Michelin star.

In 2007, Mollica returned to Italy to head up Il Palagio at the Four Seasons Hotel in Florence. Under his leadership, the restaurant was awarded a Michelin star in 2011, as well as numerous other honors. During this time, he developed a philosophy based on the quality of ingredients and the promotion of local producers, advocating the importance of "knowing the man behind the product".

In 2021, Mollica embarked on a new adventure, opening Chic Nonna inside Palazzo Portinari Salviati. Later, the restaurant is renamed ATTO, reflecting greater control and personal vision in the management of the entire complex. A year later, he received his first star at the presentation of the Michelin Guide 2023.

His approach to the art of cooking is characterized by balance, with an emphasis on seasonality. His dedication and commitment to preserving the country's gastronomic tradition by supporting small producers make him a prominent contemporary figure.
