Massimo Giovannini is an Italian pizza maker who has turned his passion into a successful career, earning national and international recognition. His dedication to the white art and attention to the quality of ingredients led him to found Apogeo in Tuscany, which has become a reference for gourmet pizza lovers.

Massimo Giovannini's career began in 1995 when he opened his first restaurant in Viareggio. There he developed a deep knowledge of dough and baking techniques, honing his skills and laying the groundwork for the future.

In 2010, he decided to take on a new challenge by opening Apogeo in Pietrasanta. The eatery stands out for its attention to the selection of raw materials and innovation in its highly original proposals. Massimo's philosophy is based on the use of local ingredients, with particular attention to the quality of the flours and the natural rising of the dough.

His dedication and expertise have earned him numerous awards. In 2013, for the first time, Apogeo received the Tre Spicchi which distinguishes itself in the pages of the Gambero Rosso Pizzerie d'Italia guide. The latter, from the 2023 edition, the tenth anniversary, rewards him with the Star, a symbol of excellence consolidated for ten consecutive years. In addition, in 2024, it was ranked 41st in the 50 Top Pizza World and 20th in the 50 Top Pizza Italia, as well as the Best Beer Service 2024 - Peroni Nastro Azzurro Award

Giovannini is also a member of Ambasciatori del Gusto, an association of italian restaurant professionals dedicated to promoting the country's gastronomic culture.
