Finnish-born chef Mickael Viljanen is the owner of the two Michelin-starred restaurant Chapter One by Mickael Viljanen in Dublin. His culinary style is a blend of Scandinavian, Irish and French traditions.
Born in Stockholm and raised in Finland, Mickael Viljanen began his culinary training at local schools before expanding his experience in the UK and Ireland. After a formative stint at the Tannery Restaurant and five years as executive chef at Gregans Castle Hotel, where he was named Chef of the Year by Food & Wine Magazine, he took the plunge in 2012 at The Greenhouse in Dublin, where he earned two Michelin stars in 2019.
In 2021, Viljanen took the helm at Chapter One restaurant in partnership with founder Ross Lewis. Under his leadership, the restaurant confirmed its second Michelin star and established itself as one of Ireland's leading haute cuisine establishments. Viljanen's cuisine is known for its technical sophistication and use of seasonal ingredients, enhanced by Scandinavian and French influences to create an elegant and innovative dining experience.
Mickael has traveled extensively throughout his career, gaining experience in countries as diverse as Asia, the US and the UK, and has served as a judge on various TV and non-TV events, including MasterChef Ireland and the San Pellegrino World Young Chef.
