Tim Boury

Tim Boury is one of Belgium's most celebrated chefs, known for his refined contemporary cuisine and deep respect for local produce. Founder and chef of Boury Restaurant in Roeselare, he was awarded his third Michelin star in 2022, joining the elite of world gastronomy.

Born in 1983, Tim Boury developed his culinary skills at Hotel School Ter Duinen, one of the most prestigious culinary schools in Belgium. After his training, he gained experience working in renowned restaurants such as Comme chez Soi and Oud Sluis under renowned chef Sergio Herman, where he perfected his approach to fine dining.

In 2010, Tim Boury and his wife Inge Waeles opened their eponymous restaurant, Boury, in Roeselare. The restaurant quickly gained recognition: the first Michelin star came in 2011, followed by the second in 2017 and finally the third in 2022. This makes it one of the most important restaurants in Belgium and one of the few to hold three Michelin stars.

Tim Boury's cuisine is characterized by the use of local and seasonal products, with a focus on quality and sustainability. His dishes play with flavors and textures while keeping the main product at the center. Some of his iconic dishes include lobster tartare with rowanberries and green apples, and reef fish turban with fennel. The Michelin Guide praised his ability to create complex yet perfectly balanced dishes with original use of sauces.

In addition to the success of his restaurant, Boury founded the Boury Academy in 2018, a culinary academy that trains young chefs from around the world and offers them a full experience in his kitchen. This project is a way for Boury to give back to the culinary community, sharing his knowledge and training the next generation of culinary talent.
