Tommaso Luongo is a chef known for his commitment to sustainability and zero-mile cooking. He currently runs the restaurants Il Mirto and Il Corbezzolo at the Botania Relais & Spa in Ischia. In 2022, Il Mirto was awarded a Michelin Green Star, the only restaurant on the island to be recognized for its focus on sustainability.
Tommaso Luongo's career began at the side of Michelin-starred chef Pasquale Palamaro, with whom he worked for ten years at the Indaco restaurant in Ischia, honing his skills in Mediterranean cuisine and the innovative use of seafood.
He then took over the management of the restaurant Il Corbezzolo at the Botania Relais & Spa in Ischia, where in 2022 he created dishes such as "Ris-orto alla pescatora" and "Spaghetti alla Nonno Tommasino", dishes that recall family roots and traditional cuisine.
In 2021, Tommaso took the helm of Il Mirto, a vegetarian restaurant that quickly gained attention for its sustainability and commitment to using local ingredients. In 2022, the restaurant received a Michelin Green Star, becoming the first and only restaurant on Ischia to receive this prestigious award.
Dishes that reflect this philosophy include "Tortello fritto stuffed with bitter herbs" and "Ris8 passaggi", both from 2021, which demonstrate Tommaso's attention to seasonality and quality ingredients.
In 2023, Tommaso participated in the "Luna Nova" dinner with Chef Massimo Mantarro, exploring the plant-based cuisine and culinary traditions of the islands of Sicily and Ischia.
