The Biography
Born in the Friuli region of Italy, Fabio Bragagnolo grew up as the son of a baker, developing a passion for cooking from a young age. His career took him through prestigious restaurants both in Italy and abroad, where he honed his culinary skills. In 1999, Bragagnolo moved to France, starting as an assistant at the renowned Carpaccio restaurant in the Royal Monceau hotel in Paris, a city he regards as the ultimate culinary capital.
In 2004, Bragagnolo arrived in Corsica at Casadelmar, initially as a sous-chef. After a decade of dedication, in 2014, he assumed the role of executive chef, successfully leading the restaurant to maintain its two Michelin stars. His culinary philosophy revolves around using local and seasonal ingredients, with a particular focus on fresh fish and Corsican produce, interpreted with expert technical mastery and refined presentation.
Under his leadership, Casadelmar has become a beacon of Mediterranean gastronomy, drawing an international clientele and elevating Corsica’s reputation as a destination for fine dining.
