The Biography
Damien Grey was born in 1979 in Sydney, Australia. Initially interested in architecture, he discovered his true passion in the kitchen. In 1999, Grey moved to Ireland, where he worked with some of the biggest names in the Irish culinary scene.
His journey led him to open Heron & Grey in 2015 with Andrew Heron. This restaurant, located in the Blackrock Market, quickly earned a Michelin star in 2016. After Heron’s departure in 2019, the restaurant was rebranded as Liath, which means "grey" in Irish.
Under Damien Grey's leadership, Liath received its first Michelin star in 2020 and its second in 2022. The restaurant is renowned for its bold and original cuisine, exploring the five fundamental tastes: salty, umami, sweet, bitter, and sour. Grey focuses on using high-quality seasonal ingredients sourced from across Ireland, creating dishes that celebrate the richness and diversity of contemporary Irish cuisine.
Liath is a small restaurant with few tables, allowing Grey and his team to interact directly with guests, providing a personal and memorable culinary experience. During the pandemic, Grey used the time to reflect and renew the restaurant, introducing a contemporary design that sets the cozy interior of the restaurant apart from the rustic market outside.
