A talented chef trained among the greats. Just a few months after opening, his restaurant “Pulejo” has won a MICHELIN Star and the Newcomer of the Year award from the Gambero Rosso Restaurant Guide 2022.
Born and raised in Rome, Davide Pulejo studied at a hotel school and then, at just twenty-one, made his debut in the kitchen at the “Il Convivio Troiani” restaurant in Rome.
He has also worked in Copenhagen at “Noma”, in London with Agnar Sverrisson, in Milan with Luigi Taglienti at “Trussardi”. He was also sous chef for Luciano Monosilio at the “Pipero” restaurant in Rome and then executive chef at the prestigious “L'Alchimia” restaurant in Milan where he won his first MICHELIN star in 2020, the same year he received the award for best young chef from the MICHELIN Guide.
In 2022, Davide opened his own restaurant: “Pulejo” in Rome, where he showcases his elegant yet characterful cooking that enhances the product by combining tradition with technique and innovation. Just a few months after opening, the restaurant earned the Newcomer of the Year award from the Gambero Rosso Restaurant Guide and a MICHELIN Star.
In the restaurant, the theme of memory is central, both for the sensory evocation that the chef wants to infuse in the dishes, and for the intent of “bringing diners home” by welcoming them into a warm and familiar environment; it is no coincidence that the restaurant is named Puleio: the name of the chef's family.
