Ciro Scamardella has journeyed through Italy's MICHELIN-Starred restaurants to acquire as much knowledge and experience as possible, all to uphold the reputation of "Ristorante Pipero," a One MICHELIN-Star restaurant in Rome. Named Italy's Emerging Chef in 2016, Scamardella is also the Star of the TV series "Ciro a Mammà."

Born in Bacoli, Campania, Ciro Scamardella was enamored from a young age by the aromas from his grandmother's and then his mother's kitchen, sparking his passion for cooking. Subsequently, he chose to attend a hospitality institute where he gained his first experiences through lab hours and an initial job at an Irish Pub. He then ventured into the world of Gambero Rosso at the Città del Gusto in Naples.

At the age of 18, he left Campania and worked in various parts of Italy. He spent a season at "La Sirena" in Filicudi, followed by a summer on the island of Elba at a 5-Star hotel with its own restaurant, offering room service and serving an impressive daily number of guests.

Then came the MICHELIN-Starred chapter: his first year was with chef Paolo Barrale at "Marennà," followed by an internship with Cannavacciuolo at "Villa Crespi," and then an experience in Capri at "Terrazza di Lucullo," under the guidance of chef Gennaro Esposito. However, the pinnacle of his career was reached at La Sarte, in the three-MICHELIN-Starred kitchen of Martin Berasategui, where he started as an intern and was later offered a job in one of the chef’s restaurants. But for Ciro, an opportunity arose to join Anthony Genovese’s team at the restaurant "Il Pagliaccio," where he stayed for almost a year. He then forged a lasting collaboration with Roy Caceres, lasting four years, including two years as sous chef at "Metamorfosi."

 

In 2016, he was named Italy's Emerging Chef and, from the following year, became the much-followed Star of the TV program "Ciro a Mammà" on Gambero Rosso Channel. Since July 2018, he has been the head chef at "Ristorante Pipero," owned by maître-patron Alessandro Pipero, and already MICHELIN-Starred. Ciro's mission is to maintain the restaurant’s high standards with his cuisine of intense flavors, Mediterranean elements, and innovative techniques. Driven by an intense fervor and seriousness that leave no room for hesitation, his career exemplifies that only with a solid foundation of experiences can one reach a true degree of creative and stylistic maturity.
