Jacopo Ticchi, named Young Ethical Chef of 2023 by Care's, is a rising star in the world of high-quality sustainable and innovative cuisine, all delivered in a casual atmosphere. "Trattoria da Lucio," ranked 26th in the Top New Restaurants Europe 2023 by OAD, where the best fish from the Adriatic Sea, also aged, is served.

Born in Emilia-Romagna in 1994, Jacopo has always been passionate about food, which is evident from his studies at the hotel management school in Riccione, where he graduated in 2012. Various experiences followed: he worked in the kitchens along the Romagna Riviera and later ventured to Australia, where he gathered international culinary experiences.

In 2014, upon returning to Italy, he joined the brigade at Pietro Leeman's "Joia" in Milan, where he stayed for a substantial four years. During this period, he learned to elevate raw ingredients to their highest potential before moving to Spain to delve into the world of tapas. In 2018, back in Rimini, he became part of the “Nécessaire bistrot” team alongside Enrico Gori, where he began researching the aging process of fish.

In November 2019, he opened "Trattoria da Lucio," where he is the owner and chef, serving the finest fish from the Adriatic Sea with the awareness and conscience fitting for the new millennium. Two years after its opening, in June 2021, he published his first book, "Beyond Aging," in which he discusses the aging process of fish, how to do it, and its benefits.

The year 2023 has seen him receive the prestigious Young Ethical Chef Award from Care’s. He has also been included in Forbes' list of 100 Innovators Under 30; meanwhile, his trattoria has climbed to the 26th position in the Top New Restaurants Europe ranking by OAD.
