Dabiz Muñoz followed his passion from Madrid to Asia and then to London, culminating in the opening of his own restaurant, "DiverXO", third in the 50 Best Restaurant list. Collecting MICHELIN Stars and international awards, Muñoz combined his love for Asian cuisine with European culinary tradition, blending innovation and flavor on his journey to the top of the global gastronomy scene.
Born in Madrid in 1980, Dabiz Muñoz quickly developed an unstoppable passion for the culinary arts. He began his culinary adventure at "Viridiana," a milestone in Madrid's fusion gastronomy, honing his skills and refining his culinary sensitivity. Inspiration then led him on various journeys to Asia, drawn by the richness of its cultures and culinary traditions, and to London, where he worked at "Hakkasan Mayfair," "Locanda Locatelli," "Benares," all awarded with a MICHELIN Star, and "Yauatcha Soho."
In 2007, the chef returned to his homeland, settling in Madrid where he inaugurated "DiverXO," a true temple of fusion cuisine. The establishment achieved extraordinary success, crowned with its first MICHELIN Star in 2010, followed by a second in 2012.
In the same year, he created "StreetXO" within the Gourmet Experience of El Corte Inglés on Calle de Serrano, offering a more informal dining experience.
In 2013, "DiverXO" received the ultimate recognition of Three MICHELIN Stars and the following year was relocated to the NH Hotel Group-owned Eurobuilding Hotel in Madrid.
Following a divorce, Dabiz married TV presenter and entrepreneur Cristina Pedroche.
In 2015, he released a short film for "DiverXO" on YouTube, which circulated in the gastronomic world due to its unique photography and theme: the disruptive culinary experience of eating Muñoz's dishes.
In 2016, the chef expanded his entrepreneurial ventures and opened a business in London: "StreetXoLondon" in Mayfair. The same year, Dabiz's life was immortalized in the documentary series "Cuatro El Xef," followed by a second season filmed at the London establishment in 2017.
Despite the closure of "StreetXoLondon" in 2020 due to the inevitable impact of the COVID-19 pandemic, Dabiz did not lose momentum. In 2022, he opened "RavioXo," serving ravioli and complex pasta dishes with Asian influences.
Furthermore, Muñoz was voted Best Chef in the World at The Best Chef Awards in 2021 and 2022. The following year, Dabiz and Cristina welcomed their first daughter, Laia.
The culinary artist has always emphasized, "When I opened DiverXo, I did it with certainty: I didn't want to replicate anything seen around - he told us - I wanted to be free. But I also wanted to be like those painters who have 25 colors available, not just 5. I wanted to create something more beautiful and tastier than the others." His masterpiece, awarded Three MICHELIN Stars, ranked 3rd on the prestigious World's 50 Best list in 2023.
