Executive chef at Bellevue Hotel & Spa in Cogne (Aosta Valley), he leads Le Petit Bellevue, awarded 1 MICHELIN Star in the MICHELIN Guide Italy 2026. The property also holds Two MICHELIN Keys in the MICHELIN Guide’s hotel selection.

His professional path starts early: in 1996, while attending hospitality school, he begins working in the kitchens of Florence. The apprenticeship runs through the Jolly Hotel (as commis chef), then restaurants such as Aurora in Fiesole and Da Delfina in Artimino, where he grows into the rhythms and discipline of a classic brigade. 

In the early 2000s, he widens his repertoire with experiences that include a stint at the MICHELIN-starred La Voglia Matta (Fusignano). Between 2003 and 2005 comes his first sustained encounter with altitude—Selva di Val Gardena—followed by a long chapter at The St. Regis Florence, lasting six years up to 2011

Leadership roles consolidate in Florence: executive chef at Portofino (2013–2015), then Nil Hotel, and later the kitchen of Guelfi e Ghibellini at Baglioni Relais Santa Croce, a tenure the local press places up to 2021

In December 2022, he moves to Cogne as the new executive chef of the Hotel Bellevue. The shift is not only professional: it aligns with a personal bond to the mountains—“I love the mountains, and I love skiing,” he says in the announcement of his arrival—an environment that demands precision, calm, and daily attention to seasonality. 

At Le Petit Bellevue, the MICHELIN Guide describes a dining room of just five tables, set inside one of the region’s most romantic hotels, with a cuisine that foregrounds Aosta Valley specialities—from freshwater fish to game—while keeping detours to a minimum. The setting, dominated by the Gran Paradiso, becomes part of the experience: a table where landscape and plate speak the same language. 

Recognition follows: Le Petit Bellevue holds 1 MICHELIN Star (MICHELIN Guide Italy 2026)—an award instituted by the MICHELIN Guide—and Bellevue Hotel & Spa has been awarded Two MICHELIN Keys in the Guide’s hotel selection, highlighted by the regional press when the Keys debuted in Italy.
