Born in Torre del Greco, Campania, in 1978, Salvatore Bianco has built a solid and coherent professional path through some of Italy’s most significant gastronomic destinations. His career first developed in Franciacorta, before continuing in Rome and Naples, and eventually leading him back to the Italian capital in 2024.
A passionate art enthusiast, Bianco defines cooking as “the only form of art capable of engaging all the senses at the same time.” From this belief stems his guiding principle, “avanguardia del passato” (“the avant-garde of the past”), a philosophy rooted in contrast, a deep connection to place, and a careful attention to cultures, memories and flavours. In his view, the chef acts as a custodian of the past, interpreting it through technique and contemporary awareness to shape a modern, meaningful cuisine.
Throughout his career, Bianco has been a leading figure on the Italian gastronomic scene, gaining recognition for his ability to merge intellectual depth with culinary clarity. His time in Naples, where he led the kitchen of Il Comandante at the Romeo Hotel, was marked by the achievement of a Michelin star, confirming the maturity of his expressive language.
In 2024, he returned to Rome as Executive Chef of Hotel Eden, one of the city’s most prestigious five-star luxury hotels and part of the Dorchester Collection. Here, he oversees the hotel’s entire culinary vision, shaping menus that reflect both the setting and his personal philosophy.
For Hotel Eden, Bianco has developed the menus of La Terrazza and Il Giardino Ristorante, starting from traditional regional recipes and reworking them into refined, Mediterranean-inspired dishes. Each plate is conceived as a balance between memory and present time, where technique enhances flavour and cultural references emerge with measured elegance.
