Riccardo Camamini's recipe: rice, crusco pepper, smoked egg yolk
Ingredients for 4 people
For the crusco pepper cream
Ingredients
- 50 g crusco peppers cut into regular pieces, roasted
- 6.5 g mandarin leaves
- 13 g lemon peel
- water to taste
- vinegar to taste
Procedure
Toast peppers, blend them, toast mandarin leaves, lemon zest. Rehydrate roasted peppers with water and vinegar, lemon peels and tangerine leaves. Blend and adjust for flavor.
For the rice
Ingredients
- 200 g carnaroli rice
- 60 g cream of crusco bell pepper
- 15 g egg yolk
- extra-virgin oil to taste
- salt to taste
Procedure
Lightly smoke the egg yolk, keep refrigerated. Cook rice like a risotto, with water, cream with crusco cream.
Dish composition
After creaming, arrange on the serving dish as in the photo, adjust salt and extra virgin olive oil, and sprinkle with egg yolk.
