Chef Giuseppe Lamanna, originally from Calabria, leads the gourmet kitchen at Ca’ del Moro Wine Retreat in Grezzana (Verona) with elegance, sustainability, and respect for the land. In 2024-2025 he earned major accolades including 2 Gambero Rosso Forks, 1 L’Espresso Toque, and a place in the Michelin Guide 2025.
Born in Soriano Calabro (Vibo Valentia province) on December 23, 1990, Giuseppe Lamanna grew up in Dinami, a small Calabrian village where he first discovered his passion for cooking.
At the age of 16 he began his professional career, gaining experience in hotels and restaurants across Northern Italy.
In 2021, he joined Ca’ del Moro Wine Retreat (surrounded by the vineyards of Valpantena, Verona), where as head chef he was given creative freedom to highlight the flavors of Lessinia while weaving in his Calabrian roots.
His work at Ca’ del Moro Wine Retreat has been recognized with: 2 Forks from the Gambero Rosso Guide 2024; 1 Toque from the L’Espresso Guide 2024; Selection in the Michelin Guide 2025.
Alongside his restaurant work, he is also a lecturer at the European Institute of Tourism, and works as a strategic consultant, advising hotels, resorts, and hospitality venues on culinary projects.
His culinary philosophy is based on sustainability, respect for local ingredients, and the enhancement of regional identity products. He cultivates a biological vegetable garden to ensure fresh and controlled produce. His menus include land, sea, and vegan options, always defined by elegance and balance.
