Angelo Sato is a Japanese chef and owner of Humble Chicken in London. With a career spanning some of the world's most prestigious cuisines, Sato has brought his unique culinary vision to the heart of Soho, combining his roots with European influences.

Born in Japan, Angelo Sato began his culinary career at the age of 15, working in professional kitchens. At 17, he moved to London with the ambition to expand his skills and had the opportunity to work in some of the world's most renowned restaurants. His career path includes experiences at RyuGin in Tokyo (three Michelin stars), NARISAWA in Tokyo (two Michelin stars), Eleven Madison Park in New York (three Michelin stars), Restaurant Gordon Ramsay in London (three Michelin stars), and Restaurant Story in London (two Michelin stars). 

In 2021, Sato opened his restaurant, Humble Chicken, located in Soho, London. Initially conceived as a yakitori-style izakaya, the restaurant evolved in 2022 into a more refined tasting experience, offering a 16-course menu reflecting Sato's Japanese roots and the European influences acquired during his career. This transition led the restaurant to earn its first Michelin star in 2024 and its second in 2025, cementing Sato's reputation as one of the UK's most innovative and talented chefs. 

Sato's culinary philosophy is based on the sustainable use of ingredients and a nose-to-tail ethos, ensuring minimal waste and maximizing flavor. The restaurant offers an intimate dining experience, with counter seating that allows guests to observe the preparation of dishes, creating an immersive and theatrical experience.
