Giovanni Giberti is a Milanese entrepreneur and pastry chef, best known for co-founding Pavé, a renowned café and bakery in Milan. Together with his partners Diego Bamberghi and Luca Scanni, he has created a place with a welcoming atmosphere, a reference point for quality pastries and breakfasts lovers.

In February 2011, Giovanni Giberti, together with Diego Bamberghi and Luca Scanni, decided to change their careers and leave their jobs to follow their passion. This desire led them to create Pavé, a place that would reflect their personalities. In October 2011, after months of planning and research, they found the ideal space at 27 Via Felice Casati, which will officially open in 2012.

The location, one of the best in Italy, stands out for its 100% artisanal production, with an open laboratory that allows customers to directly observe the creation of the products. The meticulous care of the raw materials and the attention to detail have made the latter a landmark in the Milanese gastronomic scene, as it offers a wide range of choices, from fragrant croissants to custom-made cakes, from fresh breads to leavened products of all kinds. 

The shop has been honored as the best cafe in Milan and listed among the 50 best Italian pastry shops by the Gambero Rosso Guide from 2019 to 2022, in addition to being awarded the Three Cups and Three Grains and the Two Cakes in 2025. In 2014, the New York Times recommended Pavé as one of the places to visit during Expo 2015.

In addition to the main location, Giberti has expanded its offering with the opening of a shop dedicated to ice cream and slushies and Birra di Quartiere, a project focused on craft beers. These initiatives reflect the willingness of Giovanni and his partners to constantly innovate, always keeping quality at the center.
